it's what's for dinner...

We got a new addition to our family, been working on this deal for about a month now, i retired the old smoker, sorta like remember when Seinfeld retired Golden boy .... i will submit some pics soon, here is a site for this guy, he builds a super quality smoker , here is a link and he lives in Jacksonville Fla
and delivered to Tampa area, the one i bought is 475.00

it is the 8th, 9th , 10th, and 11th pictures, right now, it is burning in the back yard, for like 2 hrs now, i seasoned it with vegetable oil and i will burn oak and charcoal for another 2-3 hrs, tonight, and will burn it out again tomorrow after work ....i will post up some pics maybe the weekend ... this smoker i would say weighs approx 600 lbs ... if you guys live within id say 4 hrs or so from Jacksonville, i would not bat an eye about his grills ... i'm like a kid a Christmas right now wife said earlier ...

Dinner! Beef brisket, sharp provolone, horseradish mayo, roasted tomato, pepperocino sauce topped with fried egg on a soft sesame seed roll.

Well, got the smoker broke in, burnt it out twice, and cooked some on it last weekend, I'm up at 6 this am, and i put a Boston butt and 2 chickens on, butt will take probably 10 hrs, chickens only 4, here is some pics of grill, and some stuff i made last weekend, last weekend was ribs, chickens, pork steaks and b/beans -- added meat later to the beans ... this new smoker is great so far, will see how the butt comes out, on my old smoker, you could just grab the bone and pull it out ...
 
It was 475.00, but i'm 55 and looks like it will be last one i ever have to buy, look up a few posts and his craiglist add is there ... it is a real quality piece i believe ... and it is a reverse flow smoker .. google reverse flow smoker if your not familiar with that .. it has a plate in bottom of it and channels all heat and smoke under to other side , supposed to maintain heat within 5 degrees in whole grill, no hot spots or cold spots... in his add above, you will see the warming box above the fire box ... so far ... i am real pleased with it ... my old one is over 13 yrs old, if the butt comes out good today, i will scrap old one.

I wonder how mad the Mrs will be when she doesn't get a Christmas present?

Come Nov...she's going to Kansas to visit her mom....I figure that will be the perfect time for me to relive my youth by taking a long road trip.

Bone pulled out, and all just fell apart, 9 1/2 hrs ....

chickens were a 3 hr smoke and a 1 hr wrap, butt was 5 1/2 hr smoke and a 4 hour wrap in the "hot box"
internal temp went to right at 200 deg.

it stayed at the 170 - 175 wall for almost 3 hrs .... lol

Sandwiches or the beers? I totally could have done 2 sandwiches but at almost $15 a sandwich that's a tough pill to swallow. Now the adult beverage, we had more than 2 for sure.

Here is tonight's meal.. Grilled Mahi with a homemade spicy Asian marinade on top of coconut rice with pineapple mango salsa. Second time in two weeks, might have to step up to 2# of fish next time, splitting a pound just ain't cutting it.

Guess i'm sick, 2 weeks ago i bought this grill -- to go along side of the new smoker, she wont let me do smoke/charcoal near the house, the gas grill is on the back porch ... but i bought this grill now , http://www.lowes.com/pd_44754-49769-2121_0__?productId=3033621

man, its a good solid charcoal grill - 129.00 . and look at the reviews, not just me sayin that .. this is for burgers, wings, kabobs, etc, etc ....
anything you wanna put flavor in .. charcoal is flavor ... cooked on it now 2 weekends, does a nice job ...

Caught mine on sale a few years back for the same price....w/ the side smoker.

I don't use the smoker except for storage of igniter and tongs. To do a slow smoke on that grill....arrange the charcoal in a U shape. Place the lit charcoals on one end and let it burn around the U. If you stack them two wide with the occasional one on top for a third row...no vents open, it'll burn for 8hrs or so depending on the wind...right around 175-225.

She'll never know...shh...I won't tell.
 
Here we go, few hours 'til my meat coma. 6.5#'s of goodness! I guess Turkey is on tomorrow's menu.

Damn good! My in laws like it like shoe leather, I like it still moving so it's a tough compromise. They eat the ends and I'll take what's in between. My son, he won and got the dead center, my Christmas dinner gift to him. The dogs, they had two dinners, the second was covered in the red juice and I'm not sure they even ate slow enough to taste it. LOL

Well its back at it to recreate my old grill and pizza oven.
Some have seen pictures in the earlier pages.

This is the new and improved.
Built it out if cinder blocks with stucco finish

Grill to the left and base for 1000lb oven on the right.

More pics when I fire oven the first time next week.

Probably bake some bread.

Last day of curing and thought i'd try it out.
Got to say it worked great for the first time.

Tomorrow is all pizza since it can be heated up to 400+C.
I tried that one 300C. Needed to be hotter.
More pictures to come......

Any recipe for those small yelllow potatoes.
I'm thinking olive oil, salt, pepper, and rosemary. Going to use ceramic casserole oven came with to roast them.
