What is different about the white engine?

They started as Yellow... then white... then silver. It's just the era they were made.

In the case of the 720 and 800 they were the same... just differn colors.

Why do they call it the white engine? What is different in the white engine versus other engines?

Are you taking about the 1997/1998 951 engine in the GSX?
If so, its something about engine leaning causing engine failure.
The year after they fixed it by changing position of carbs and adjust jetting and going silver
Not sure if they did anything to the cylinders.
The white pipe they say gives you better hp iirc.

This is all from what I've read not first hand.

Or would this be like the question I have ... somewhere in the timeframe of 1991 - 1994 the 580 engine changed from yellow to white; what are the differences?

There were a few changes in the Yellow to the white engines. The most notable was how the water flowed, and where the electronics at. Parts aren't interchangeable... but they were very similar.
