Well, it got wet anyway. My '98 GS finally made it to Lake Martin today. It started right up and made away from the shoreline well enough. I added power to bring it up to speed and got maybe 10 seconds of power before it just shut down. Didn't quit. That time. I went through this process 3-4 times and started wondering. It got to the point of requiring re-starts but refused to keep running at higher power settings. I finally coasted around a few minutes and headed to the slip. In test running out of the water it ran very nicely but when it came under load it simply gave up. I suspect a bad fuel line so all will be replaced. It has a new carb kit, fuel filter and plugs, fresh gas and oil. Oh well, maybe next weekend.....This is what happens when you buy someone else's problem.

check the compression, BR8ES gapped .022.
Could be air leak into the gas supply side of carb, as this sounds like not enough fuel, or even a seizer when she gets hot and the piston swells in the cylinder. Hope the two RV oil lines are still soft and not brittel and broken!

If you can check and see if you have spark. Open the gas cap when it dies and try a restart. The gas system vent may not be working. Getting vacuum lock. You can be sucking air too. Most times it will only go so fast and hit the wall. You can get the repair manual for free off the Internet. It has check out procedures for fuel system. You did check out pop off if you rebuilt carb? OSD.com has pop off testers for sale. They cost $25. Well worth having. Used to test pop off on carbs and fuel system checks. There is a sticky at top of page about carb's. Well worth reading. Gives you an idea when and where the carb acts like it does.
