I have a 99 XP limited and just had a new throttle cable put on took it out on the river and the ski cuts out for about a second. It didn't do this before I had the new cable out on
An example at running 60 mph at full throttle it will drop down to about 55 than pick right back up to 60 it like dies for a second than picks right back up
The only thing the carb cable could do is not get to full throttle or if they didn't adjust the TPS correctly you might be stuck at 4300 rpm. I would also check the oil pump adjustment that is connected by the throttle cable. If they did not adjust the oil pump correctly with the new cable you could be seizing at top end. This is highly unlikely but should be checked.
