2003 GTX supercharged doesn't wanna go full Wraaaaaa anymore

Hello forum!
I was out the other day enjoying the flat water one sunny day (as one does) and was looking for wakes from bigger boats to jump. I've done this many times without much issue (except this one time I almost tore the hull in two, but that's another story)
This time one landing was fairly hard, but still kinda smooth, the Seadoo coughed for a few seconds, then engine died. I managed to get it to start, only to have it bogging down. After a minute or two of resting, I got it started (rather easily too) but when giving it full throttle it bogs down or something, hit's a limiter or whatever.
Here's what it sounds like in water and on land
So rather than going "Wraaaaaaaaaaa" it goes "Wraaaaa wraaa wraa wraa wraa" which obviously sucks.

Now, I'm no mechanic but I've checked plugs (only 20 mins old) + coils and there is spark, checked all fuses and they are OK, inspected all injectors and fuel pump and everything appears to be working fine (albeit one of the injectors has the tiniest tiny leak).

It starts super nice and easy and idles perfectly too, so there's that...

Caveat; my display doesn't work and it doesn't sound any issues via the beeper. I've been in contact with me mechanic but he's super busy, so if anyone's got some ideas to what could've caused this (other than the obvious jump on a wake) and what I can try to fix it, I'd be über grateful!
 
Hard to diagnose without tools like Candoo. You also can't see codes without a working display.

All you could do is parts roulette. I would start with a bad coil. Buy 1 new coil and rotate it though or swap coils with someone who has no issues.

Thanks for the reply, and I'm looking to get some computer wizardry going on. I checked all coils and plugs, and everything fires. If a coil is defect, would that not result in zero spark?
 
No, a bad coil often results in erratic results in different rpm ranges.

Case in point, I had a bad cool that would result in a miss fire at around 5K rpm. Replaced it, problem went away.

I borrowed a coil from a friend. Unfortunately that didn't solve the problem; tested all three coils with the same result. The search for a solution continues :)
 
So I got a CanDoo connected and electronically there is nothing wrong with the Seadoo. It hit's the chip (8k rpm just fine) and everything else looks fine (except the throttle only goes to like 80% open despite the lever being cranked fully, but that's another topic).

I threw the machine into the water to see if stuff had changed overnight (#wishfulthinking) and it does hit the chip (the infamous 8k rpm) and goes "wraa wraa wraa" but lacks acceleration and torque. So my follow-up question is this, could cavitation or wear be causing this? I haven't checked the jet pump so I don't honestly know if it's damaged.

(All mechanics in my area are super busy, so getting audience with a professional is unfortunately no short-term solution)
