1998 Challenger Continuous Beeping

My 1998 Challenger (2 Rotex engines) starts making continuous beeping noises about a minute after being in the water with engines started. Continuous beeping according to the manual indicates engine overheating. This happens before I even touch the throttles, so the engines are still cool. A boat mechanic told me to try disconnecting the heat detection sensors on the engines if it happens, but it did not do any good. This did not happen last year and I just had both head gaskets replaced a week ago. Any ideas on why this might be happening?
 
Apparently my fuel gauge system is in need of replacement in the gas tank. I've been told that once the beeping starts, to toggle the low fuel switch and it will stop. I'll give it try once I get the boat back from the shop. Just thought I'd share this in case anyone is interested.
