steve on the water

My boat sat out a season due to the birth of my son. Now my wife wants to get it back on the water soon. I need to clean out the fuel system and want to rebuild the carburetors, but my son takes all my free time. So I have decided that I should send my carbs out to be rebuilt to meet any sort of schedule. I will spend what little time I have cleaning out the fuel tank (pre-mix as oilers were removed by previous owner) and assessing fuel lines. Am I missing anything in the fuel system that may be gunked up?
Does anyone have a good suggestion on where to send them? Any specifics on how to best package them up for shipping? Twin 787's, so 4 carbs going in the box.
Thanks
Steve
