Blocking......
Matt, you can approach this two ways. If you have a tree and chainfall, you can string it up with slings and lift it from the trailer.
If not, you can do as I do. Get some cinder blocks and some wood. With a block and piece of wood, back the trailer by hand to put your ride plate over the wood. Now, lift up on the trailer. When you do this, its much easier with two people but I've done it by myself. Once the ride plate is on the wood block, start easing the trailer out from under the ski. As you get a little further out, you can put another block and wood. Then, as you progress, you'll need to put a block and wood on each side. Once supported, you should be able to remove the trailer.
Now, with the trailer out, you can use a hydraulic jack and a piece of wood to protect the fiberglass. Begin in the front, raising the ski with the jack and blockign with 2X4 etc..then, move to the back and do the same. You will want to bring the ski up evenly. Also, you can do this to move the supports around, once you've cleaned/repaired the area you are working in.
The easiest way to do this, is to get a cooler full of beer, call up about 4 or 5 of your buddies, tell them your out having a beer. Invite them to join you. Once they have a couple brews, make a bet with them that they can't lift your ski onto some blocks you already had pre-set before they came. The "you can't do it" while drinking, always works.........
