Water steaming from back of ski

There are two streams of water that shoot out the back of the ski.
I'm wondering how hot that water should be.
I've felt the water when flushing the motor and it never got as hot as it did this weekend while riding it (and towing about 500 lbs. on a towable)
Is this water supposed to get hot enough to steam?
It's the first time I've been a passenger (spotter) on my ski and was able to reach down and feel the water coming out while riding. The water was hot enough to be steaming on 75-80 degree day. It didn't burn me, but it was still very hot. Is this normal? What should be the normal operating temperature of the water coming out?
 
The water coming out of the "Tell Tail" is suppose to warm, you need to check the temp the cylinder head. If it is too hot to touch than it is too hot. The heat temp. sensor will sound off at temp of 200-210 degrees.

When the heat temp sensor goes off.. does it display a message or just beep? I was wondering this too. My water isn't really hot unless its more of an idle.. but its pretty hot then. The heads are cool enough for me to easily touch them and not have to take my hand off.. infact they almost feel cold... but my thing keeps doing a single beep.
 
To test the temp sensor you need to have a multimeter. Check the sensor to see if it has a open circuit. Then being careful not to get burned put it in a pan of water. Bring it up to about boiling point...212* Be careful not to get burned...check it again. Now it should have continuity between the bottom and the top connector. Also if you take the wire on the seadoo, and just ground it, it should sound the beeper, with the lanyard on. The sensor makes contact to ground when it is hot and activated.

when you are flushing, you are running the cooling system backwards. the area of the head the telltale gets fed from is the first to get the water. so it will be a lot cooler when flushing than when running.
