I would like to simply and quickly test the overheating alarm on my 1994 GTX. If I plug in the lanyard but leave the engine off, and heat the temperature probe with a heat gun, do you think I can safely get the alarm to go off without damaging anything?

just disconnect the wire from the sensor on the head, with the key on, ground the sensor out on the head somewhere, it should light the gauge and beeper should sound

Don't use a heat gun. It get's WAY too hot. A hair dryer, or a lighter may be better. BUT... if you remove the sender from the head, be careful putting it back in. The are hollow,a nd you will break it off, if you over tighten it. Put thread liquid thread sealer on it... and just make it snug.

Thank guys, as Dr Honda cautioned about the care needed to not damage the sender when putting it back in, I was hoping for a easy test to see if the buzzer was at least working. Taking flowmasterman's advice, I disconnected the wire from the sender and touched it to the prongs that you attached the spark plug caps to when they are removed from the plugs. To get the buzzer to sound, I needed to touch the starter button with the lanyard attached. The engine briefly turned over and the buzzer sounded. While I don't know if the sender is working or not, at least the buzzer is.

hot to the touch? I don't know if i've touched the engine, but i know the pipe on either of my 951s gets too hot to keep your hand on it for more than a few seconds...
