I tightened everything as much as possible, being careful not to overtighten the plastic carb adapters. When I start it, the RPMs start climbing on their own like there's something leaking. The carbs are adjusted correctly. Any ideas? I'm going to pull it apart again tomorrow AM."

My response,

Could be the carbs themselves, it could be a vacuum leak at the carb to intake gaskets or the intake to block gaskets, first thing I would try that works best is a can of carb cleaner/throttle body cleaner and spray around the gasket areas untill the leak is found while the engine is running, when the engine stumbles from spraying around the gaskets you have found your leak, when you retighten the bolts try to use factory torque specs with possibly blue ONLY not red tread lock, also seadoo sells a red gasket maker that you spray on each side of the gasket for these to seal better/seal completely. Tell me how that works for you, then I can try to assist you further if needed. But do not pull the carbs until you make sure it is or is not a gasket leak first.

Any other ideas, I think I have hit this nail on the head...

Other then that if none of that is the problem then is the possibility of a stuck throttle cable/not properly adjusted or that you have a warped or cracked plastic intake, a vacuum leak would cause the rpm's to rise as soon as it is started and possibly rpm peak on it as well.
