RAVE valve orientation and gummy substance

We are recent owners of this 2001 Seadoo Sportster equipped with the 947/951 carb engine.
Winter projects are now beginning with the RAVE valves. I'm uncertain of any previous repairs or maintenance.

The valves were stubborn to extract as they were seized in position with a combination of black gummy substance and significant carbon deposits. I managed to patiently wiggle them out and get the valves clean.
By other discussions, I am to install the valve with the wording "TOP" towards the piston, but the valves I have on hand have no markings other than two small circles on one side.
1) Which way does the valve go back in? Taper to exhaust piping or towards piston? I found them with the taper towards the exhaust pipes but like I said, I don't know if/who/when anything was previously done.
2) What is the black gummy substance that managed to pack in everywhere with these valves? It's like watered down grease.

Rave valve are installed with the flat side toward the pistons, tapered side down:

Black stuff is likely carbon and oil from crankcase combustion. Messy and annoying, but not particularly harmful. Routine cleaning is all that is necessary to tame the mess.
