First time poster looking for help. I received the P0118 fault code on my 2012 210 Challenger today. Is this something I can replace/fix myself? If so any help is greatly appreciated! Also, is it safe to take it out if I have no symptoms? I. E. Engine and boat seems to be running fine and coolant level

Only you can determine if you can fix it yourself... it depends on your capabilities. If you do want to be able to work on your boat yourself, getting the shop manual is a good start.

From the diagnostic procedures, it appears that P0118 is an indication the temperature sensor is returning a signal that is out of range. Your sensor might be bad, or there might be a problem with the wiring to it. It could even be unplugged. There are diagnostic procedures in the shop manual you can follow with an ohmmeter to diagnose if the sensor itself is bad. Or you could just "trial and error" replace it and see what happens.

I don't really recommend running in this condition, as you won't know if you do develop a cooling problem, or something else goes wrong, since you will have check engine on all the time.
 
I second the suggestion on getting the service manual. Sign up for the paid access in the forum & download it for free. You won’t be disappointed you did & you won’t find it cheaper anywhere else. Then you will be on your way to learning all about your boat & have the proper instructions on doing any repairs or maintenance that you might will need to do.
 
If you have an IR gun, you can rule out the high temp by taking readings near the sensor to confirm what it's telling you. An IR gun is a good tool to have in your toolbox and they're fairly inexpensive.
