Overheating?!

I know i am looking at something that isnt an issue, but wanted to ask so i know when to freak out.

I took the ski out for a ride this weekend, and the engine temp said 80-ish degrees. I parked the ski for a while, and decided on another ride. I climbed on, and checked the temps again, and the engine was up to 98 degrees. I didnt have any alarms going off, but i was wondering at what temp alarms might start to go off. I got a little concrened because on my prvious excursions, the engine temp never got higher then 75-ish. After some nice wave jumping and all, the engine temp did come back down and eventually got to 68.

So my questions is at what temp will the overheating alarms go off? I couldnt find any answers in my manuals...
 
Well, I'm assuming that is in celsius, and so you know cars run at around 105C, just for reference.
