what does changing the intake grate and the ride plate do?

can some one explain this to me.

i have a stock 2000 xp ltd and am looking to get a little more out of it.

Changing the ride plate can help you in different ways. Some can help you corner, some can help you plain out faster and ride different in the water. As far as intake grates go, on glass water they actually slow you down because of the extra drag from the foils in the water. However, in rough water they work excellent because it keeps the rear end in the water which is how we move forward. Its all depending on what the water is like mostly where you ride.
If your looking to get more out of it, you should consider a filter and jet kit. Cleans up the soggy midrange and gives much better throttle response and more top end. You could even look at a new prop, I've been told the stock 15/20 is excellent all around in the XP. Its all in what you are looking to get more of, acceleration? response? top end? or a combo? A prop is going to give you one or the other, not both. A jet kit will help with both.

and when i replace them what do i seal them with?

If you use a stock ride plate from a 97 XP you will gain a little top speed.

For a jet kit I would call Bill Oneal owner of Watercraft Magic at 626-914-9509 between 9-5 pst. He will be able to set you up with filters and jet kit. You can also ask his advice on ride plates and intake grates. To seal it you want "The right stuff". Its in a black cheese wiz can but works awesome. For an intake grate, you want something with foils. Foils stick into the water to grab and force the water into the pump. Almost like a scoop. Otherwise your just wasting money on a shiny stock replacement. I personally love my R&D ride plate. Never tried any others so I can't compare for you.
Try Bill, he is extremely knowledgeable and will send you in the right direction. Helped me out a ton with some stuff and told me not to waste my money on some stuff as well like aftermarket props for all around riding. My filter kit, jet kit, and the filter outerware (water repellers) were $225. But well worth the money.
