Noob buys a '96 Speedster from another noob that screwed it up

So I bought a Speedster. I've learned a few things, but not all. I've put aftermarket engine controllers on it, and fixed the horrible wiring associated with it. The engines run, but will die when at idle after running it hard, and not throttle up after getting it to start again. Someone with experience looked at it today and said the cooling system is rigged badly. I'd like some opinions on that, and what I need to do to make it right.IMG_20200729_192959828.jpg

Is there supposed to be a restriction port here? it is open all the way through, same ID as hose.

the "leg" of the T goes to the water hose port. Most of the water just dumps out the back when running it off the hose. Putting a vise grip on that outlet is the only way water will come out of the exhaust.

The hoses look to be routed correctly. The only time you would need to pinch off the hose is to backflush. When the boat is in the water running, water will circulate in the opposite direction and the majority will exit through the exhaust.

When you run water through a motor on the trailor,,,is water coming out of the pisser at the outside of your hull above the swim platform? This will indicate that your cooling system is working properly and cooling that engine.
There is no hose going to the pisser, and no connection obvious to connect one. Part of my issue.

The drain line that attaches to the bottom of the exhaust manifold should a Tee fitting with a smaller hose going to the pisser for each motor
