"new" owner of '97 Sportster, acceleration question

I've recently joined the world of Seadoo boating with a 97 Sportster. The boat is in excellent condition, although the graphics have faded. I'm desperately trying to find replacements for the "dash" where the knobs are located. The previous owner removed the label and has handwritten "lights", "fan", etc. It looks pretty sad. Among some of the upgrades/fixes I plan on doing, one has me stumped.

Th boat cranks fine, and runs fine. However, after being on the water for say, 30 minutes and going into idle, the motor has trouble accelerating back to top speed. For instance, if I'm at idle, then move the throttle all the way forward, it can take a while before it "wakes up" and accelerates. The weird thing is, it's nothing I can pinpoint, or reproduce on a consistent basis. If any 'Doo Vets have any suggestions on what to look for/at, I would appreciate it.

About 3 months. The previous owner "said" it has been maintained by a local seadoo mechanic annually. So in short, I don't know. Guess that's where I'll start looking though.
