New engine difference in 96 Speedster

I have a 96 Speedster and one engine blew up (wrist pin needle bearing blew apart) so I replaced it. New one works great. I've now noticed some differences between the new and old engine.

The old engine, as well as the old one that blew up, would either idle or go wide open - 7 or 8k. There was no in between. That is still the case with the remaining old engine. The new (SBT) engine will run somewhere in between as well. This is new to me. Same carbs.

First question: Why?
Second question: What might I want to do to the old engine to prevent it from exploding at the beginning of next Summer? Compression on it is still good - 145 on both cylinders, but it was still good on the one that blew up as well.

You have an air leak causing a lean runaway. Or your idle is set way too high.
