Challenger hangs at 5000 rpm

I am ready to sink this boat!!!! 97 Challenger, new SES 787 premium rebuild, broken in, hangs at 5000 rpm, sometimes if I burp the choke it will kick it over the hump and rev up to 6500 to 6800 rpm and stays there , but that only works for a few times .... new Solas impeller and wear ring rebuilt Rave valves w/ new o rings and bellows greased and cleaned and oiled, new bellows in water pressure regulator valve, have adjusted oil pump and accelerator pump every time i pull plugs they are black and wet I haven't rebuilt carbs yet because it ran fine last season I am running out of money and patience quickly any suggestions???? thanks racerxxx , yes I have the updated rave valves with slots and the housings are also good so that PDF doesn't seem to apply....
 
Have you gone thru the entire fuel system, rebuilt the carbs etc.....? Did you determine what killed the last engine and rectify the problem?


Here's a stab in the dark:

In your electrical box there is the voltage regulator. Disconnect the red wire and try it out. If the rectifier goes bad it can do some wacked out stuff to these things. Remember, once that is disconnect your're not charging the battery.

It's real simple....

If you "Burp the choke" and it rev's up... then the carbs aren't right... and YOU ARE LEAN. Running lean, WILL roast your new engine.

So, get those carbs off, and make sure they are clean, and have OEM parts inside.
 
thanks Dr Honda, When I "burp" the choke it cuts the engine out then it seems to pop by the 5000 rpm level sometimes I a can also do it when running 3/4 throttle and dropping it back to idle and back to full throttle and again once in a while if I am cutting across a wake in a 30 mph plane it will kick it over the 5000 rpm hump also and the plugs are black and wet when I pull them after a run.....
