Boat very twitchy and sensitive to steering input

My boat has the 240efi fitted and we had it out for the first time after engine and jet pump rebuild. I only have one issue, and that is that the boat is ULTRA sensitive to any other boat wake/waves and steering input. She climbs onto the plane very easily but things get a bit hairy as speed picks up to hold course.

I would probably have to adjust the ride plate, but which way do I go? Do I adjust the trailing edge more down into the water stream or push it up closer to the boat?

Any input will be greatly appreciated.
 
I made a longer ride plate similar to what "aquaman" makes and sells that reduces the bouncing and it rides a lot better than stock. It pushes the trailing edge of the ride plate farther down in the water to lower the bow of the boat. It does make the boat ride better.
