i just got done rebuilding my carbs, replacing the gray fuel lines and putting everything back together. i started the ski and it starts fine but after a sec the rpm's take off. my question is will that go away after i put it in the water. also none of the adjustment screws were touched on the carb

IT SURE WILL, SKI AT FULL THROTTLE, RIGHT TO OTHER SIDE OF LAKE....
Recheck the adjustment/tension on throttle cable, or possibly, your pull'n air somewhere...

take some carb cleaner and spray at the base on the carbs with engine running, if the engine dies it sucking the cleaner around the base gasket, (vaccum leak) i had that problem with my polaris

The engines revs up due to a lean condition. Check all the intake areas for a leak as David described...It shouldn't runaway in the water due to the extra load on the engine from the water density.
