'96 Explorer - Idles great, but motor will shut down at higher RPMs

Tried searching the forum to see if this has been addressed before, but maybe wasn't using the right keywords. Recently had the carburetors replaced to fix a problem with a '96 Explorer that would stall at idle. The boat now idles fine, but the motor will shut off within a minute or less when giving it more than about 10% throttle. Starts great, idles great, runs strong, but will shut down within minute. And not peter out slowly, it shuts down quick. Any help would be appreciated.
 
I'm certain the cooling water is circulating when connected to a hose, though can't be certain it was circulating when it was in the ocean. It does seem like a sensor telling the motor to shut down before it overheats but that's just a guess.
 
I had similar case with my '97 Explorer last time the engine was off from boat under repair. After rebuild it did same as yours. Don't exactly know how it started running fine again. Limped back to boat ramp and gave some revs. Started to feel bit bad to push the rebuilt engine like that. Somehow the airpocket or whatever got released and the engine woke up and worked fine 2 years until couple weeks back the original crankshaft bearing gave up :D I'm building the whole driveline from scratch now...
