Hi, I need your opinion.

I have a Utopia 205 2003 Mercury 240 hp v6 efi engine (2 stroke injection). I suppose it heats up because if I drive down 30 miles / hour when I ask it dies (almost has to turn off), but if I stay at 30 mph and more, I can drive 2 hours without any problem. If I slow down I don't do more than 20 min I have to turn off the engine, let it sit (have a beer) and I go again. It is never cold in the first moments of my ride. when I drive at 35 m / h my engine runs at 5000 rpm .Thank you

Make sure your pee hole is flowing. Bugs like to nest in it and clog that hose. Check for damaged/leaking hoses and hose ends.
