2004 Challenger 2000 w/ 240 EFI Mercury - Need direction on issue

Some background....about a year ago the oil level was low and the alarm went off. Filled oil tank with new oil and it seemed to fix the problem. Then had a few friends over and my son was not watching the tow rope and it got sucked up. I pulled to boat out of the water and took care of the rope.

Since then the 4 beeps every 2 minutes has been going off.
It won't reset. Oil level is good. Oil reservoir is good as well.
I checked the fuel water separator no water.

If I throttle full the engine sputters and coughs and the solid alarm comes on until I put it back in neutral.
I can gradually get the boat up to about 15 mph but any faster and the solid alarm comes on or engine begins to sputter again.

I have a friend that is a car mechanic and we have tried to research this problem. We think it is the fuel injectors.
I have replaced all of the spark plugs and some junk did come out when I turned it over without the plugs in.
I currently am running a can of seafoam through with new gas. I pumped 12 gallons of OLD gas out of the tank.

I need some help determining if it is the injectors. And if so...where can I find the diagram to have me and my friend do this ourselves.
