2000 Speedster w/ 240 mercury keeps shutting down at full throttle.

Hello, I am seeking for a little guidance. I have 2000 Speedster with the 240 Mercury V6. Last season I had a problem with the stalling out after a few minutes at full throttle. I would be able to restart it right away and take off again, only to stall out maybe 2 minutes later. Each time after that the I had to wait to restart it got longer. Finally I started and idled back to the dock with no more issues. Over the winter I replaced the fuel pump, fuel lift pump and inline fuel filter. Went out on the 4th and the same issue happened again. I hoping someone can share some insight on what the problem could be

Do you have any gray fuel lines? They are known problems.
Have you checked the other fuel filters?

All of my fuel lines are black and I have not exchanged the fuel separator filter.

I am going to see if the regulator/stator or ECI is the issue.
