My 05 Seadoo Sportster Le Di pulls right with only me in it. I realize the boat would naturally lean to the right because of the weight of the driver. I have to oversteer to the left to make the boat go straight and this causes a loss of speed because the nozzle is slightly to the left. Would adjusting the steering to the left slightly compensate for the pulling to the right?

I still get good speeds, but holding the steering wheel to the left is annoying.

Adjusting steering would be same as you steering, so I would think. You could get a ballast tank to compensate for the weight of the driver.
